I love when the hockey season starts and I can purchase a soft pretzel at the concession stand and enjoy it during the second period.I also love the hockey but treats make it much better. Perhaps that is why I sit by my mom at every game! This recipe makes 8 soft pretzels that are a great treat on a Sunday afternoon or delivered warm to a March Madness Party.
1 cup water
1 tablespoon dry yeast
3 1/2 cups bread flour
1 tablespoon canola oil
2 teaspoons salt
1 cup warm water but 2 teaspoons baking soda (reserved for brushing dough before baked)
1 tablespoon course salt for garnish
In the bowl of a standing mixer with the dough hook attached mix water, yeast, and bread flour for 7 minutes on low speed. With the mixer running add oil and salt and change to medium speed and mix for 6 minutes.
After done mixing allow 40 minutes for dough to rest in a oiled bowl covered with a kitchen towel.
Transfer dough to a wooden cutting board dusted with flour and punch down the dough to remove air bubbles. Divide dough into two pieces and each piece into four parts to make 8 rolls. Allow to rest for 5 minute
Roll each piece of dough into long strips about 18 inches long and loop them so they form a pretzel (in the photos you may find few of mine actually look like traditional pretzels)
Place pretzels on a parchment lined baking sheet and allow to rise for 40 minutes.
Bruch the rolls with water and baking soda mixture and sprinkle with salt. Bake in oven preheated to 400 degrees for 20 minutes until browned. Enjoy while warm.
